OVADA D.O.C.G. “CARASÖI”
DOLCETTO DI OVADA SUPERIORE
Recognized geographical indication
This great wine is produced in compliance with the great tradition of Piedmont.
The name “Carasöi” comes from the dialect of Ovada and it recalls one of the traditional operations that wise farmers used to perform in the vineyards. In fact, when all the stakes in the vineyards were made in wood, after trimming – such as between winter and spring – (even today we carry out this operation in historic vineyards replacing the old stakes spoilt from time to time), farmers used to remove them from the soil and cut the spoilt part that had been in contact with the soil and humidity; such stakes were then used as firewood. The remaining part of the stake was sharpened and the stake was stuck back into the soil. This operation is still called “ancarasè” and the spoilt parts that were cut away were called “carasöi”.That’s why we have decided to give this name to this wine, because it encloses the history and tradition of our territory.
