Piemonte Denominazione di Origine Controllata Chardonnay 2015 “Ciarlatan”
100% produced using Chardonnay grapes grown in vineyards that are about 30 years old. Grapes are pressed softly and once the fermentation is complete, the process called “elevage sur lies” is started and “batonnage” are made manually, at the beginning twice a week, then only once.
It aged for about 12 months, depending on the years of production.
Its pale yellow is accompanied by an intense scent of flowers, balsams, fruit, dried yellow flowers, ripe and withered apples, liquorice root, tobacco leaves and wood.
Best served at 11-12°C.
Ageing capacity: 10 -12 years
The fermentation gives this wine sweet tannins that make it perfect if served with slightly fat food and white meat.
Best served with mature cheese.
